Chocolate Chip Cookies
A healthy twist on the favorite classic...chocolate chip cookies! With the dark melty chocolate and the soft texture, these cookies are a definite treat! These grain free, refined sugar free baked goodies are sure to fool anyone!
Ingredients

1/3 cup coconut flour

1/4 cup melted coconut oil

3 tablespoons pure maple syrup

1 teaspoon vanilla extract

1/4 teaspoon cinnamon powder

1/4 teaspoon pink salt

2 whole eggs

1/3 cup dark chocolate chips or chunks
Directions:

Preheat oven to 350 and line a cookie sheet with parchment paper.

In a medium size bowl, combine the coconut flour, cinnamon powder and sea salt.

Using a separate bowl, beat the eggs and stir in the maple syrup, vanilla extract and the melted coconut oil.

Pour wet ingredients into the bowl with dry ingredients continuously whisking until batter is completely combined.

Fold chocolate chips into the batter.

Using a tablespoon scoop small round mounds of dough onto the parchment lined baking sheet spacing them an inch apart.

Bake for 13-15 minutes or until edges have slightly browned.

Allow to cool for 3-5 minutes and enjoy the cookies warm.
